Grains are supposed to be no-nos on keto diets, but I'm not sure why one is to avoid whole grains which provide a large portion of fiber, but then take fiber pills to avoid constipation. It seems extremely counter-intuitive. Most folks "rice" cauliflower- which does not, by the way, taste like rice or potatoes- and some folks will use bulgur wheat or couscous.
Whole grains- which contain a whole lot more of the items considered "good nutrition" than ready-to-eat grains like Uncle Ben's rice- are a good idea once you've reached ketosis levels; you can use brown rice, wild rice (actually a grass) and one of my favorites, whole-grain barley. Net carbs are low for these grains and fiber nicely high- win-win.
Barley, cooked, cooled and paired with a dried fruit- like sweet cherries- and chopped cucumbers, onion and green papper, dressed with a smidge of olive oil makes an excellent cold salad, too. Good stuff.
