It's best to wash your hair about every 3rd day, depending on the quality of your hair, some people may have oiler hair and then three times a week is about optimum, it allows your hair and scalp some breathing room and doesn't dry it out too much. I too went through a period of washing every day, showering too, but after years of that, the hair and skin became awfully dry, and hair shed more easily. Now I wash on the third day, but my hair is below the shoulder, so I can get away with more. Sometimes I can make it to the 4th day in winter, when the hair isn't exposed as much. But then there's hat hair to deal with. So every third day seems good - so if you wash Monday, then Wednesday or Thursday. You'll have to give it a try to find out what works best for your hair, but you're right, too much washing strips oils and will make the hair, and skin drier and more brittle.
